Tips for Perfectly Cooked Butter Chicken!
- Get a slight char on the chicken
- Cook chicken on high heat first to get those golden edges. This adds a subtle smoky flavour that mimics restaurant-style tandoor cooking.
- Don’t rush the base
- Cooking onion, garlic and ginger properly is key. Soft, slightly golden onions means a deeper flavour.
- Cook out the tomato paste
- Let it fry for a minute or two before adding the other liquids. This removes acidity and boosts the richness.
- Add youghurt slowly on low heat!
- High heat = split sauce. Turn the heat down and stir in yoghurt gradually for that silky finish.
- Taste and adjust at the end
- The magic step most people skip:
- Needs more salt?
- Too tangy? Add atiny bit more honey
- Too thick? Splash of Water
- Small Tweaks can make a big difference.
- The magic step most people skip:
Common Mistakes to Avoid
- Boiling after adding yoghurt – This is the #1 mistake! It causes curdling and will ruin the texture
- Using chicken breast and overcooking it – Leads to dry chewy chicken
- Skipping the spices or Under-seasoning. Butter chicken shoudl be rich and layered – not bland. Don’t be shy with Garam masala and Paprika.
- Not letting it simmer. Rushing the sauce = flat flavour. Even 10 minutes of simmering makes a big difference.
- Too much Tomato, not enough balance. If it tastes too acidic, add a touch more honey
- Watery sauce caused ny not simmering long enough or adding too much liquid.
Pro “Saavy’ Hack
Blend the sauce before adding the chicken back in. This gives you that restaurant-quality silky smooth butter chicken and takes it from “home cooked” to “wow!
