  • 1 cup gluten-free rolled oats
  • 1 cup desiccated coconut
  • 3/4 cup brown sugar
  • 1/2 cup gluten-free plain flour (or rice flour)
  • 125g butter
  • 2 tablespoons golden syrup
  • 1/2 teaspoon bicarbonate of soda
  • 2 tablespoons boiling water

Instructions

Preheat your oven to 160°C (fan-forced) and line a tray with baking paper. In a large bowl, mix together:

  • gluten-free oats
  • coconut
  • brown sugar
  • gluten-free flour

In a saucepan, gently melt the butter and golden syrup together. In a small cup, mix the bicarbonate of soda with boiling water, then stir it into the butter mixture. (It will foam — that’s normal!) Pour the wet mixture into the dry ingredients and mix well. Roll tablespoon-sized portions into balls and place on your tray. Flatten slightly. Bake for:

  • 10–12 minutes for chewy biscuits
  • 13–15 minutes for crunchy biscuits

Allow to cool on the tray (they firm up as they set).
