Ingredients
  

  • 2 Tbsp Butter
  • 4 Cloves Garlic
  • 2 Tbsp Plain Flour
  • 2 Cups Full Cream Milk
  • 1 Cup Thickened Cream
  • 150 g Parmesan Cheese, grated
  • Salt & Pepper
  • 1/2 Tsp Italian Herbs (optional)
  • small handful Fresh Parsley (optional)

Method
 

  1. Melt butter in a saucepan over medium heat.
  2. Add minced garlic and cook for about 1 minute until fragrant, being careful not to brown it.
  3. Whisk in the flour and cook for another minute.
  4. Slowly pour in the milk while whisking continuously until smooth. Add the cream and continue stirring.
  5. Simmer gently for 4–6 minutes until the sauce begins to thicken.
  6. Reduce the heat to low and gradually stir in the Parmesan cheese until melted and smooth.
  7. Season with salt, pepper and Italian herbs if using.
  8. Toss through cooked pasta or serve over chicken, vegetables, or your favourite meal.

Notes

  • Freshly grated Parmesan melts more smoothly than pre-packaged grated cheese.
  • Keep the heat low after adding the cheese to prevent the sauce from separating.
  • Add a splash of pasta water if the sauce becomes too thick.
  • For extra flavour, add cooked chicken, mushrooms, spinach, bacon, or roasted vegetables.
  • Store leftovers in the fridge for up to 3 days and reheat gently.
