Creamy Mushroom Pasta Sauce

This Creamy Mushroom Pasta Sauce is a rich, silky homemade sauce made with sautéed mushrooms, garlic, cream, parmesan, and simple pantry ingredients. Ready in just 20 minutes, it's perfect tossed through pasta, served with chicken or steak, or used as the base for comforting pasta bakes.

Ingredients
  

  • 40 g Butter
  • 1 Tbsp Olive Oil
  • 300 g Mushrooms
  • 3 Cloves Garlic
  • 2 Tbsp Plain Flour
  • 250 mls Chicken Stock
  • 300 mls Thickened Cream
  • 80 g Parmesan Cheese (fresh grated)
  • 1 Tsp Italian Herbs
  • Salt & Pepper to taste
  • 1 Tbsp Fresh Parsley (Optional)

Method
 

  1. Heat butter and olive oil in a large frying pan over medium heat until the butter has melted.
  2. Add the sliced mushrooms and cook for 6–8 minutes, stirring occasionally, until they are golden brown and most of the moisture has evaporated.
  3. Add the minced garlic and cook for 30–60 seconds until fragrant, being careful not to let it burn.
  4. Sprinkle the flour over the mushrooms and stir well for 1 minute to cook out the raw flour taste.
  5. Slowly pour in the stock while stirring continuously until the mixture becomes smooth.
  6. Add the thickened cream, parmesan cheese, Italian herbs, salt, and pepper. Stir until combined.
  7. Reduce the heat and simmer gently for 3–5 minutes until the sauce thickens and becomes creamy.
  8. Serve immediately tossed through cooked pasta, spooned over chicken or steak, or used as the base for a creamy pasta bake.

Notes

  • For the best mushroom flavour, allow the mushrooms to brown properly before adding the cream.
  • Avoid boiling the sauce once the cream is added, as high heat can cause the sauce to split.
  • Freshly grated parmesan creates a smoother sauce than pre-shredded varieties.
  • Add a splash of pasta water when mixing with pasta to help the sauce coat evenly.
  • For a vegetarian version, replace chicken stock with vegetable stock.
  • Leftover sauce can be stored in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently on the stovetop and add a small splash of milk or cream if the sauce needs loosening.
