Method
- Cut the avocados in half, remove the stones and scoop the flesh into a medium bowl.
- Mash the avocado with a fork until you reach your preferred consistency. Leave some small chunks for a chunkier guacamole.
- Add the diced tomato, red onion, coriander and lime juice.
- Season with salt and black pepper.
- Gently stir until everything is combined.
- Taste and adjust the lime juice and seasoning if needed.
- Serve immediately with corn chips, tacos, nachos or your favourite Mexican-inspired meal.
Notes
- Use ripe avocados for the creamiest guacamole.
- If your tomato is particularly juicy, remove the seeds and excess liquid to prevent watery guacamole.
- Add chilli or jalapeño for a spicy version.
- Store leftovers in an airtight container in the refrigerator for 1–2 days.
- Press plastic wrap directly onto the surface to help reduce browning.
