Halloween Monster Meatballs – Easy Spooky Family Dinner

Ingredients
  

  • 500 g Beef mince
  • 1/2 Cup Bread Crumbs
  • 1 Egg
  • 1/2 Small Onion
  • 1 Clove Garlic
  • 1 Tsp Italian Herbs
  • 500 mls Tomato Passata
  • 150 g Mozarella
  • black olives for decoration
  • capsicum, red and green for decoration
  • cooking spray

Method
 

  1. Preheat the oven to 200°C (180°C fan-forced) and line a large baking tray with baking paper.
  2. Add the beef mince, breadcrumbs, egg, Parmesan, garlic, Italian herbs, salt and pepper to a large bowl.
  3. Mix gently with your hands until the ingredients are just combined. Avoid overmixing, as this can make the meatballs tough.
  4. Roll the mixture into approximately 18 evenly sized meatballs and place them on the prepared baking tray.
  5. Lightly drizzle the meatballs with olive oil and bake for 18–20 minutes, or until cooked through and lightly browned.
  6. While the meatballs cook, heat the tomato pasta sauce in a large saucepan over medium-low heat.
  7. Cook the pasta according to the packet directions, then drain.
  8. Transfer the cooked meatballs into the warm tomato sauce and gently turn to coat.
  9. Divide the pasta between serving bowls and spoon the meatballs and sauce over the top.
  10. To make the monsters, place small pieces of mozzarella onto the meatballs for eyes. Add small pieces of sliced black olive as the pupils.
  11. Cut capsicum into thin slices pieces and tuck them into the meatballs to create spooky monster hair.
  12. Serve immediately while warm.

Notes

  • Make ahead: The meatballs can be prepared up to 24 hours ahead and stored covered in the refrigerator before cooking.
  • Freezer friendly: Cooked meatballs can be frozen for up to 3 months. Thaw overnight in the refrigerator and reheat thoroughly in the sauce.
  • For easier decorating: Prepare the mozzarella eyes, olive pupils and capsicum teeth while the meatballs are cooking.
  • Keeping the eyes in place: A small dab of tomato sauce can help the mozzarella pieces stick to the meatballs.
  • Kid-friendly: Let the kids help decorate their own monster meatballs with different expressions and toppings.
  • Vegetable swap: Use capsicum, carrot or cucumber pieces for different monster features.
